How large can you stroke out our 2.2 Close deck blocks?

Factory is 75mm stroke.

Many have done a factory EJ25 79mm stroke without issues with the block. You will have to pay attention to piston compression height though.

I would *educated guess* that any stroker crank meant for an EJ20 or EJ25 will work with very few issues in the EJ22T case. I think a few makers offer 83mm cranks.
