Free Range Veal

Free Range Veal
So I was watching food network, and the Sara Moulton is making pasta sauce using veal shanks. She says "if you have any concerns, you could always use free range veal." I'll repeat that one more time free range veal.
So, I get on the pc and do a quick google search before posting something online and learning that there's some great humane way to grow veal and that I am a moron. Here's what I found.

Warm snuggly pen my ass. They mean the hotter than hell calf hutch he is tethered to by a 3 or 4 ft leash. I still can't decide which is worse, the modern factory farming life or disassembly line death where they are lucky if they are unconscious before anything else is done.

All factory farming, especially for slaughter, is cruel. The big cows don't have it any better than the little ones. Or the chickens. Or pigs or turkeys...

I'm thinking of writing a book based on the industrial farm next door to a friend of mine in upstate NY that he's battling in court. Settlement should be coming relatively soon. These people are among the lowest scum man has created. They are not farmers! Real farmers try to keep a balance - these people make PG&E look like philanthropist members of the ELF. The head of it used to run a bank. His son makes meth out of the chemicals. They killed an old woman by systematically dumping chemicals across from her when she complained. They'd clean it up before their pocketed cops called them before coming out to check. They 'accidentally' dumped 3 million gallons of animal waste in the river and killed all the fish. Finally, the sportsmen complained and someone started to listen. I could go on about the kids in the local schools with learning disabilities traced back to the toxins or the harassment and attempted drug framing of my friend, but I'll save it for the book. And the government subsidizes it all.

My favorite meat is free-range.
Venison. Its one of the best red meats for you. It has no marble fat. All the fat can be trimmed off, which you do anyways because it has a really gamy taste.
But yeah, there's nothing like some boneless venison chops done right. (runs to the freezer....)

Near Ithaca, I believe, but that may be where his other house is (the one he has to stay in so his kid's learning disability doesn't become a worse irreversible impairment).
