I want to install a secret switch in the dash of my Legacy Turbo 2.0.
When the switch is on, the car can not be turned on. When the car is on and the switch is passes from off to on, the car turns off.
Witch cables in the ignition may I use?
If I want to put it in the motor compartment. Witch cables can I use?

The most obvious wire to use in the dash is the red wire of the ignition switch. This is "ignition" wire.
It would be pretty easy for a thief to find, though. A thief is likely to be looking at those wires anyway.
It may be a better option to interrupt the wire that the ECU uses to control the fuel pump relay. It is pin 23 of the 26-pin connector of the ECU. These pinouts should be close enough to your car:

In the engine bay, one option is to interrupt the ground wire of the ignitor. On the right strut tower there is a bracket holding a sensor and a couple of solenoids. On the back of the bracket is the ignitor. The ignitor has a 5-pin connector and a 4-pin connector.
The 5-pin connector looks like this (when looking into the ignitor):
Pin 5 is the ground. The wire should be black.

Interrupt it! But, really, it is better to use the fuel pump relay wire. The red ignition wire carries much heavier current.
The car should run for an absolute maximum of about 5 to 10 seconds without the fuel pump if it is idling and the engine is warm. Usually it will not run at all though. And if you try to move the car it should die immediately.

I´m agree. I´ll use the fuel pump wire, because it seems to be the best option. I´ll not use the red wire ignitor, but I´ll put a second switch in the motor bay for the ground wire, because it´s very easy to install as I saw, and I need extra security (the car sleeps outside). Do you have idea of the current for that wire?
Do you know where is the car speed signal pin ? I can´t find it in the link to ecu! (I´m thinking to install a Basis Head Up Display in my Subaru! Thank again.
